Stems of petai – sold in bunches

Each petai stem have a string of pods. To remove the petai, a small slit is made at the bottom part of the pod, its then peeled open to expose the petai. Peel off the thin membrane. Its now ready for cooking. Fresh petai when cooked retains the firm & crisp texture so do not overcook them!!You can buy frozen petai in certain Asian grocery shops or canned petai but they are inferior. Unfortunately, you cannot get fresh petai in Australia. The Malay and the Nonya used them in their traditional dishes, sambal hae bee, sambal and assam tumis.
