Buah Keluak – an Indonesian black nut

Ayam (chicken) buah keluak is a popular and staple Peranakan (Nonya) dish with a unique blend of Chinese, Malay and Indonesian flavours.The nut is a native of Indonesia which had a tough exterior shell with a black flesh, a unique and distinctive taste. The dish is an elaborate process, starting with soaking the nut in water for two days, chop off one of the nut and scoop out the black flesh inside. It is then mixed with minced pork and stuffed back into the shell. The chicken pieces, stuffed nuts and the fried spice paste (rempah) are put together in a pot and simmered until the chicken is cooked and the sauce thickened
