Kaffir lime fruit & Kaffir lime leaves

There are several varieties of kaffir lime, all with a double leaf. The new growth leaves are dark purple in colour, fresh young green leaves are best in cooking. They have the most beautiful citrus-like aroma and are used whole or finely shredded to perfume soups (tom yum), salads, fish cake, stir-fry and curries. The kaffir lime fruit has a light green-yellow to deep green in colour with a wart-like skin.The juice is usually not used because of its slight bitterness, Malay women used the juice to wash their hair to attain a darker and shinier hair. The rind is grated and blended with other spices to make Thai curry pastes.
The plant loves heat, so avoid planting in shaded areas. Needs regular watering but good drainage is vital
